We’ve arrived at Wednesday! It’s VBS week for our kids here and I’m at bit sad today marks the halfway point. My house has been awfully quiet with the kids being gone .. that’s pretty easy to get used to. 😉
Today also marks the 2nd week of Eat This, Not That – AIP Edition! If you remember from last Wednesday, this is where I’ll highlight some genius AIP compatible products that are clever substitutes for mainstream food choices. It’s important to find substitutes for foods you love to keep from feeling deprived! Give yourself options.

The truth it, it’s HARD to be perfect at the Autoimmune Protocol (AIP) diet, especially when you’re used to the standard American diet. Cold turkey off convenience foods tends to be the worst.
For all you AIP newbies (like me!), it can be frustrating at first to learn about all the foods you *can’t* have. That feeling tends to be isolating. It would simplify things a lot to learn about AIP compatible substitutes for old favorites, right? It certainly would take the brain work, and well.. actual work, out of making everything from scratch.
Those of you who have major autoimmune diseases, who seek healing so passionately, may not find the transition into AIP as challenging because the remission you find is absolutely worth the struggle. But even for folks like you, who take to AIP like a fish to water, it’s still nice to know you have some healthy, perfectly compatible alternatives available to you.
This time we’re talking about SNACKS! ♥
1) Natural Delights Coconut Date Rolls
The first one I’ll go over is the Natural Delights Coconut Date Rolls. These are amazing because they’re pretty much available at any local grocery store (Kroger and Walmart to name just two). I snagged some for $5.99 and felt it was worth the money. For those of you looking for something sweet, this will get you fixed up in no time. In fact, I can only handle one per day which means they last me a while. Take them to the next level and pop ’em in your freezer! Yum!

2) Organic Gemini Tigernut Raw Snack
Next snack you’ll want to try, especially if you’re a nut and seed kind of person (which is not AIP compliant), is this Organic Gemini Tigernut Raw Snack. They aren’t as hard and crunchy as your typical nut assortment however, they will give you that nutty flavor. It’s important to note that tigernuts are not nuts. They’re actually tubers (small root vegetables). Score!
3) Made in Nature Toasted Cinnamon Coconut Chips
And the last product is Made in Nature Toasted Cinnamon Coconut Chips. While these may not be an identical sub for Cinnamon Toast Crunch, it’s close and tastes delicious as a guilt-free snack. Maybe try it in a bowl with coconut milk? Might be worth testing as a cereal replacement!
