If you’re chasing that perfect taco meat recipe then look no further. I’m about to introduce to you the EASIEST way ever to make healthy Paleo (and even Whole30) tacos! Yes, the ingredients are THAT clean.

The main two products I use are the Simple Truth brand available at Kroger: mild salsa and organic (grass fed) ground beef. Other than that, just grab a bunch of fresh cilantro and you’re all set!

Trust me, your tacos will be a huge hit! ♥

I’ve made tacos this way for so long that I simply couldn’t imagine any other method. But just for the fun of it, I looked at the ingredients list of a packet of taco seasoning at Kroger.. my jaw almost hit the floor. There is NO WAY I could go back to using packets of seasoning. This recipe tastes so fresh and the smell of cilantro fills up your home. So good!

Healthy Taco Meat (Paleo & Whole30)

Servings 4 People


  • 1/2 Jar Simple Truth Organic Mild Salsa
  • 1 Pound Simple Truth Organic Ground Beef Thawed
  • 1/2 Cup Fresh Cilantro


  1. Brown the thawed ground beef but do not drain the grease.

  2. While the meat is browning, chop up your cilantro. 

  3. Add half the jar of salsa once the beef is thoroughly browned.

  4. Dump in the half cup of freshly chopped cilantro.

  5. Stir together then allow to simmer on medium low for 5 minutes.

  6. Salt and pepper to taste (optional) then serve!

Recipe Notes

As long as the beef is organic and grass fed, I recommend keeping the grease in the pan because it adds healthy animal fat to your diet as well as flavor. As always, try to buy organic whenever possible!
