Here I am at Day 14 of the AIP elimination phase!
If I’m to be completely honest, it hasn’t been 100%. That’s a tough one to admit but the reality is, eliminating everything cold turkey is hard.. especially when you’re cooking for a husband and two kids who are not AIP. There have been three meals non compliant in the last 14 days but I’m letting them go, learning from the experience and pushing forward.
This pictures below are, of course, just a few of my many compliant food choices from over the past week. All very easy. They’re Paleo and Whole30 compliant as well as AIP. 🙂
And, as you may already know, each week I post about REAL MEALS, made by me, that I actually eat. Hopefully, this will help you realize that the work you do in the kitchen doesn’t always need to be fancy or complicated because, well, life. And don’t get me wrong, taste is my first priority so just because I’m eating healthy food doesn’t mean I’m choking down nasty stuff. To me, everything below was delicious! Life is to short for nothing but kale. LOL!
So how do you deal with the influences of family and what they’re eating when you’re trying to remain AIP? What had me slipping up was my failure to have readily available meals pre-made in my fridge or freezer. I ran out, hadn’t taken the time to food prep anything then got too hungry.
My sweet husband, knowing my frustration, went to a meat market an hour away on Tuesday and got me a huge grass-fed, grass-finished organic chuck roast (we don’t have anything like that in the town we live in). I’ll be able to make nearly a weeks worth of meals out of it! That bad boy slow roasted all day yesterday then sat in the juices over night. You have no idea how excited I am to dive into it today! 😉 And guess what, he even knew to get it bone-in so later I can make broth. We’ve been married 8 years and it just keeps getting better and better. ♥
