Let’s make Christmas Cookies, shall we??

I urge you to not let this Holiday season bum you out while on the AIP diet. Just use it as an excuse to get a bit creative! For example, I used homemade spinach powder to color my frosting green and activated charcoal for the black. Isn’t that crazy? The eyes are simply the color of the frosting itself (probably influenced by the toasted coconut butter). Additionally, I used dehydrated then powdered carrots and pomegranates as “sprinkles”.

This recipe is great for using cookie cutters or for simply using a glass cup. My snowflake cookie cutter (purchased at Walmart for 97¢) ended up making my cookies look a bit puffy but the glass cup circle ones stayed perfectly round. ♥

The cookies are great with the frosting but just as delicious without!

Wet Ingredients

  • 1/3 C Coconut Butter Toasted
  • 1/3 C Coconut Oil
  • 1/2 C Maple Syrup
  • 2 Tsp Vanilla Extract

Dry Ingredients

  • 1 C Arrowroot Flour
  • 1 C Tigernut Flour
  • 1/2 Tsp Baking Soda
  • 1 Tbsp Gelatin
  • 1/4 Tsp Himalayan Salt


  • 1/3 C Coconut Butter Toasted
  • 1/4 C Coconut Milk
  • 1/2 C Maple Syrup
  • 1 Tsp Vanilla


  1. Preheat oven to 350°. 

  2. Lay parchment paper over a cookie sheet.

  3. Wisk all dry ingredients together in a mixing bowl and combine all the wet ingredients in a separate bowl.

  4. Next, slowly mix the dry ingredients in with the wet until well mingled and resembling sugar cookie dough. 

  5. Roll dough flat in between two sheets of parchment paper then cut the dough into shapes using cookie cutters or a cup. 

  6. Place cookie cut outs onto the parchment lined cookie sheet and bake for 8 minutes. 

  7. Immediately remove the cookies from the sheet (just pick up the parchment paper to move them all at once) and allow them to completely cool on counter top before moving again. Seriously, don't touch them until they're cool. 😉


  1. Blend all frosting ingredients together in a magic bullet, blender or food processor until whipped and smooth (a minute or so). I used homemade spinach powder for green, activated charcoal for black and the natural frosting color for yellow eyes.
